This month, meet Chef Nick Hall, Executive Chef of SALA Samui Choengmon Beach Resort.
Chef Nick is an all-around F&B expert with over 20 years of experience in the professional kitchens of his native England, Australia and Thailand before he joined SALA Samui Choengmon Beach as Executive Chef. The two F&B outlets under his skillful direction enjoy some of the highest loyalty amongst local diners across the entire group.

If you could have one dish at SALA Samui Choengmon every day for the rest of your life, what would it be?
The crisp fish wrap (based on a fish taco) – pure heaven in every bite.
What’s something (off-property) guests should not miss out on when visiting Koh Samui?
Take a boat trip to the beautiful islands of Koh Tan and Koh Madsum.
Highlight(s) during your 6 years working with SALA Hospitality?
The main highlight has been creating the strong culinary offering that SALA Choengmon has today, giving stability and consistency to the operation by keeping a core group of people together who believe strongly in the SALA brand.
